An excellent sharpener - After years of using a GATCO clamping system -- which worked ideally - I grew tired of the labor, and purchased a Trizor XV. With it my knives are sharper because I dress the blades more frequently. No machine will refine a blade as well as hand-polishing and stropping the edge - but that's only important if you're going to shave with it. I still sometimes use my polishing hone in the GATCO clamp after using this machine, and it does make a difference. My sharpness tests are whether the knife will incise a ripe tomato without pressure, will slice bread without making crumbs, will trim a fingernail without effort and leave a clean edge, and will shave.

great sharpener - just received this last week and the first thing we did was sharpen all of our dull knives. It really delivers on its promise. It's expensive, but you always get what you pay for!
