Hamilton Beach 18 Quart Roaster Oven with Serving Pans

Q: I have the 32182 18qt. roaster. How do I use the serving trays for keeping food warm. Thank you.

A: 1. Wash all pans with warm, soapy water. 2. Remove the roaster oven’s insert pan from the oven well (if present). Fill the roaster oven well with 2 gallons (8 L) of water. 3. Spray inside the buffet pans with a non-stick cooking spray before each use. Place the empty buffet pans on well edge. Ensure that pans are secure. The pans should not float. 4. Cover with roaster oven lid and plug roaster oven into outlet. Preheat on 350ºF (180ºC) for 30 minutes or until water is very hot. 5. Uncover and carefully place hot, cooked food in buffet pans. 6. Cover and reduce heat setting to 200ºF (90ºC)s to keep foods warm. Adjust temperature as needed. 7. Stir food occasionally and keep food covered to maintain temperature. 8. Carefully add more hot water if necessary.

Q: How large a turkey will this roaster oven accomodate?

A: Usually an 18 quart roaster is used for turkeys ranging from 15-18 pounds.

Q: Will a turkey brown in a roaster oven?

A: When you cook a turkey in a roaster oven it will not acquire that oven roasted brown. The condensation from the lid dripping onto the turkey will allow the turkey to be very moist however, it will not brown.

A: Roast Turkey 1 (15 to18 Lb.) Whole fresh turkey 1/4 Cup Margarine, melted 2 Tsp. Browning sauce (Kitchen Bouquet) 1 Tbsp. Chopped parsley 2 Tsp. Poultry seasoning 1 Tsp. Paprika Preheat Roaster Oven to 400°F. Place turkey on Rack. Combine margarine and browning sauce; brush evenly over turkey. Sprinkle on seasonings. Set Rack in preheated Cookwell. Cover; roast turkey 13-18 minutes per pound at 350°F. (or until internal temperature reaches 180° on meat thermometer). For additional browning, see Roasting Chart on Page 5. For stuffed turkey, add 30 minutes to the roasting time. Turkey may be held at 200°F until ready to serve.
