The Professional ôSö Series knives are classic 3 riveted knives, and are made from Henckel SigmaForge design. This SigmaForge design is precision forged from one solid piece of steel. The steel in a Henckel Professional S knife is made from a special formula of chromium and carbon, this will give a knife the hardness and sharpness, as well as durability and corrosion-resistant. Professional ôSö Henckel knives are FRIODUR ice hardened for exceptionally sharp, long lasting knives.
Knife Set Differences
This Henckel Knife Set includes ultimate thin slicing tools. The 3" Kudamono Paring Knife and the 7" Santoku both have hollow edges for extra thin slicing. The hollow edges of these two knives will allow for air to be put between the knife and the product, creating an ultra thin slice that on most products you can see through. The Santoku is styled after Japanese cutlery and is made for slicing and dicing.
