The edges of the Classic knives are hand honed for extreme sharpness, and maintain longer cutting edge retention. JA Henckels Classic Knives have a full bolster for perfect balance and precision with a solid feel in your hand. The bolster acts as a finger guard so you have less chance of making a mistake. The Handle is classic 3 riveted design and the blade reaches the full length of the tang. The handle is tightly bonded to the blade for a very hygienic fit and effortless cutting.

Knife Differences
The Santoku knife is an Asian inspired knife with hollow edges. The hollow edges allow for air to pass between the blade and the product, making an ultra thin slice. Also, the product does not easily stick to the blade because of the air between the product.
