Now you can make your own fresh cheeses at home with The New England Cheesemaking Company's Ricki's 30 Minute Mozzarella and Ricotta Cheese Making Kit. With this kit you can produce up to 30 - one pound batches of cheese. Make yummy mozzarella balls and then ricotta with the left over whey. These cheeses can be used for a variety of delicious recipes including pastas, cannolis, pizza, calzones, salads and more! Use the included recipe book for great ideas for both making the cheese and using the mozzarella and ricotta.
The New England Cheese Making Kit includes all the ingredients needed to make these tasty cheeses in about 30 minutes. These ingredients will keep at room temperature for about a year. It is recommended that you use a local whole milk that is not ulta-pasteurized for use with this kit but powdered milk can also be used.
*Mozzarella hails from Italy and is traditionally made with Italian buffalo milk but today it is made mostly with cow's milk. Due to mozzarella's high moisture content homemade mozzarella is best served the day after it is made, but it can be kept in brine for up to a week. Mozzarella is used on most types of pizza and several pasta dishes, as well as insalata caprese with sliced tomatoes and basil.
*Ricotta is an Italian whey cheese with a creamy flavor and texture. This cheese is traditionally made from the whey of sheep, cow, goat, or Italian buffalo milk (whey is a by-product of cheese production). Ricotta is a favorite ingredient in many Italian desserts, such as cannoli, but is also used in savory dishes, like pizza, pasta, calzone, manicotti, lasagne, and ravioli.
Ricki's 30 Minute Cheese Making Kit Features:

- Once opened, store citric acid and salt in well sealed containers in a cool, dry place
- Rennet tablets will keep for a year at room temperature and at least 5 years in the freezer
- Recommended to use local whole milk that is NOT ultra-pasteurized
- May also be made with powdered milk
