Bread Recipes
|
100% Whole Wheat Bread (Directions for Bosch
Mixer, but can be made by hand)
(makes about 4 loaves)
5-6 cups hot tap water (hot to the touch;not hot enough
to burn finger)
2/3 c. oil
2/3 c. honey
2 tbsp. Kitchen Specialties dough
enhancer
2 tbsp instant yeast (we
recommend SAF yeast)
2 tbsp salt
2 tbsp vital wheat gluten
12-16 cups freshly milled whole wheat flour
Pour warm water into Bosch mixing bowl. Add approximately
6 cups flour on top of liquid. Then add dough enhancer, oil, honey, yeast,
and gluten. Use the (M) momentary switch to mix well.
Add approx. 5 additional cups flour, and salt. Turn to
speed 2. Continue ading flour 1/4 cup at a time until the dough pulls away
cleanly from the sides of the bowl. Continue kneading on speed 2
for another 5 minutes.
Oil or grease hands and counter. Divide dough into equal
portions and shape into loaves. Put into well greased pans. Let rise till
double in size. Bake 350 degrees for 25-30 minutes or until golden brown
on top. Remove from pans and cool on wire rack. Top of loaves can be rubbed
with water or butter for shiny appearance. Dough can be used for pizza
crust or cinnamon rolls.
For Bosch Compact: (makes about 2 loaves)
2 3/4 -3 cups water
1/4 cup oil 1/4 cup honey
1 1/2 tbsp dough enhancer/ 1 1/2 tbsp yeast
3/4 tsp. salt
7-8 cups flour

| Cinnamon Rolls
1 batch bread dough (above)
Roll dough into rectangle. Brush with water (just enough
so the cinnamon and sugar will stick). Sprinkle with brown sugar and cinnamon.
You may also add raisins and chopped walnuts or pecans. Roll up tightly.
Cut roll into 1 inch slices, using dental floss, thread or fishing line.
(tie around roll, and tighten slowly to cut) Place on greased baking sheet.
Flaten slightly with hand, so the middle dosn't stick up. Let rise until
double. Bake and 350 degrees for 16-18 minutes. Drizzle with light glaze
of 2 tbsp. hot water, 1 tsp. vanilla, and 1 cup powdered sugar.
HINT: Since the bread recipe above is a large recipe,
try cutting recipe in half, or using half the dough for making bread, and
half for cinnamon rolls. |
| Monkey Bread
1 batch bread dough (above)
Pull off small pieces of dough about the size of a golf
ball. Roll into a ball. Then roll in melted butter or margarine and then
roll in 1 cup sugar and 2 tsp cinnamon mixture. Layer in loaf pan or bundt
pan. Let rise until double. Bake at 350 degrees for 25-30 minutes. When
done, invert pan onto a plate. Pull apart to eat.
HINT: Since the bread recipe above is a large recipe,
try cutting recipe in half, or using half the dough for making bread, and
half for monkey bread. |
| Bread Sticks
1 batch bread dough (above)
Roll dough into finger-thin ropes and cut into desired
lengths. Brush with melted butter. Sprinkle with seasame seeds, Parmesan
cheese, and or salad seasoning. Place on greased baking sheet. Let rise
10-15 minutes. Bake at 350 degrees for 15-18 minutes.
HINT: Since the bread recipe above is a large recipe,
try cutting recipe in half, or using half the dough for making bread, and
half for bread sticks. |
Basic Rolls
Brad
E. Perersend - "Cooking with Chef Brad"
1 c. milk
1/4 cup butter or oil
1/4 cup sugar
1 tsp. salt
5-6 cups high gluten flour (Editor's
note: or add vital wheat gluten)
1 egg
1 tbsp. yeast
Scald milk or use powdered milk
mixed according to directions. Add butter, sugar, salt, and 2 cups high-gluten
flour. Mix until smooth. Beat in egg and yeast. Add additional flour to
make a soft dough. When using bosch mixer, add flour until dough barely
cleans bowl. Knead until smooth and elastic. Shape into rolls, and place
in greased pan, barely touching each other. Let rise until double in bulk.
Bake at 350 degrees for 20-25 minutes. Can be used for cinnamon rolls or
cresent rolls. Yield 1 dozen. |

Smoothie Recipes

| Marni's Fruit Smoothies
2 cups fruit juice (banana/strawberry/pineapple or tripical
mix)
2 cups frozen fruit (stawberries, melon, peaches, berries,
or mix)
1/2 can frozen juice concentrate (berry mix, or tropical
mix)
1 cups peach yogurt (or other flavor)
1-2 cups ice
1 fresh banana
Put all ingredients in Bosch blender, or any blender that
can handle ice. Turn on speed 3 and blend for 20 seconds, or until smooth.

| Fruit Smoothie
1 8 oz. fruit flavored yogurt (stawberry is a favorite)
8 oz. frozen fruit (any kind)
Cover Mixture with water
1 fresh banana ( do not use whole frozen bananas)
Sugar or Sweetener to Taste
1 cup ice
1 teaspoon vanilla (optional)
In your bosch blender (or any blender that can handle
ice) add yogurt, frozen fruit and liquid, sweetener, and banana. Using
the momentary (M) switch, jog 5 or 6 times to break up frozen fruit. Then
turn to speed 3 and blend. Next add ice through the lid opening, and blend
until smooth. Mixture may be thickened by adding more ice or frozen fruit,
or thinned by adding more liquid. Need

| Orange Juice Frosty
Add the following ingredients to your Bosch Blender. Turn
to speed 3 and mix until smooth.
1 6 oz. can frozen orange juice concentrate
1 cup milk
1/2 cup sugar
1 cup water
1 tsp vanilla
12 ice cubes

| Berry Slush
In Bosch blender combine and process until smooth, adjusting
texture with more or less berries.
1 8 oz. can orange juice concentrate
1 8 oz. can crushed pineapple (in it's own juice, not
syrup)
2 1/2 cups yogurt
1/4 cup honey
1 1/2 cups frozen mixed berry blend
2 tbsp. high protein powder (optional)
