Foods should be fully cooked and already hot before placing them on the double server, which is designed for keep-warm function only. The steam pans on this double server (pans only not the lids) may be used to cook or heat foods to serving temperature in an oven, and then covered and transferred to the warming tray to be kept warm. Cadco WTBS-2RT double server is perfect for applications where portability is needed such as catering jobs or business events. The roll-top cover on this double server also helps keep the food warm and in a sanitary environment.  The cover is then rolled up when food is being served. If you are serving product that does not require steam table pans, you can use the WTBS-2RT double server buffet stainless chafer as a warming tray or plate warmer with a roll-top cover. This feature can be very handy in a buffet setting.
