Daikon Vegetable Noodle Pho
The KitchenAid Sheet Cutter attachment not only makes beautiful long sheets of fruits and vegetables but now can make wide noodles as well. Take a nutrient dense, low carb daikon radish and turn it into noodles for this Asian inspired pho soup thanks to the noodle blade attachment for the sheet cutter.
Step 1 Add pho broth to a large pot over medium heat and bring to a simmer.
Step 2 Attach Sheet Cutter attachment to your KitchenAid Mixer and load a peeled daikon radish using the manufacturer's instructions. Slice daikon radish into long noodles using the Noodle Blade. Cut noodles down to 10"-12" long.
Step 3 As thinly as possible, slice mushrooms, jalapeno pepper, and red onion.
Step 4 Add the daikon noodles to the simmering broth and let cook for 2 minutes.
Step 5 Ladle out broth and noodles into a large bowl. Top with mushrooms, jalapeno, red onion, and sliced roast beef. The heat from the broth will cook the thinly sliced food. Garnish with chopped cilantro and a soft boiled egg if you wish.

Ingredients:
2 Granny Smith Apples 1 Package Puff Pastry 2 Tbsp Sugar 1 Tsp Cinnamon 3 Tbsp Agave Nectar
Step 1 Preheat oven to 450F. Remove puff pastry from freezer and thaw according to manufacturer's directions.
Step 2 Attach Sheet Cutter attachment to your KitchenAid Mixer and load an apple using the manufacturer's instructions. Slice apple into long noodles using the Noodle Blade. Place apple noodles into a bowl of water to prevent browning.
Step 3 Unfold the puff pastry onto a parchment paper- lined baking tray. With a small bowl of water at your side, wet your fingers and run across the edges of the pastry. Make a crust by folding a quarter inch of the edge of the pastry on top of itself, pressing down to seal it. It's very important that it seals - use more water if the pastry is not sealing together.
Step 4 Drizzle the inside of the puff pastry with agave nectar. Coil an apple noodle stand and place on top of the puff pastry. Repeat until the pastry is covered in apple coils.
Step 5 Combine sugar and cinnamon sugar in a small bowl. Generously sprinkle over the apples.
Step 6 Bake in the oven for 20-25 minutes until the puff pastry is golden brown and puffy. Let cool for 5-10 minutes, slice and enjoy!
