Cheese pressing is governed by the guidelines for the particular cheese as well as the final moisture and fat content.

Before Using: Remove any plastic coating from parts, and wash all stainless steel parts thoroughly with warm soapy water.
To Obtain Pressure: Place locks with ‘little mouse’ side facing up on top of the screws. With each ‘little mouse’ directly over the screw, press down on top yoke until desired pressure is reached.
To Release Pressure: With thumbs on locks, flip them off the screws and remove.
To Clean your Press: Wipe wooden pieces with a damp cloth right after use and dry thoroughly. Do not let them stay wet. Clean all stainless steel parts first with cold water to remove any cheese residue and then proceed with washing by hand or use the dishwasher.
To Press your Cheese: Line the mold with coarse cheesecloth and place your curds into the mold. Place a small piece of cheesecloth on top of the curds before adding the stainless steel follower. Next place the round follower on top of the stainless steel follower and the square follower on its side on top of that. If the followers are not tall enough for the amount of curds you are using, you may place a small wooden block in between the two.
Remember to: Put the yokes back on the same way they came off, making sure the collars face each other. This will give the springs a place to rest, which will not affect the wood and will give you an even pressure when pressing your cheese.
