Perfect RoastEasy Chicken
- 1 Chicken (about 3 lbs)
- Olive oil
- 1 Lemon
- Salt and Pepper
Preheat oven to 400°F.
Brush the chicken with olive oil and season it with salt & pepper. Cut the lemon in half and place ½ inside the bird and squeeze the remaining half over the skin. Cover with the RoastEasy. Roast in the oven for 20 minutes per pound. Baste through the RoastEasy with the pan juices every 20 or 30 minutes. Remove from the oven (internal temperature should read 165°F on a thermometer) and leave it to rest for 10 minutes with the RoastEasy on so it retains heat while the juices are absorbed back into the meat for extra moisture and enhanced flavor. Carve and serve – delicious!
