"Honey, will you please sharpen my knives?" With The Wusthof Beehive Handle Sharpening Steel, it's easy to fulfill that request. The secret is etched onto the solid stainless steel rod in a diamond patterned abrasive surface which could be up to 2 million grains of grit. A steel sharpener should be at least as long as the blade you are sharpening. The beehive shaped handle allows for a sweeping sharpening action with the left-hand or right hand. A frequent question is "what is the difference between a diamond, ceramic or honing steel." The answer is the core material. The diamond steel with a finishing layer of hard chrome actually grinds away material from the knife, allowing it to reset the edge. The ceramic sharpener has a very brittle surface that gently sharpens the blade. The ceramic sharpener is sensitive to shocks and can be damaged if dropped. The honing steel is made from hard chromium plated steel with a hardness of approx. 65° Rockwell. A sharp knife in the kitchen makes for a happy life in the home.
