"Honey, will you please sharpen my knives?" With The Wusthof Beehive Handle Sharpening Steel, it's easy to fulfill that request. The secret is etched onto the solid stainless steel rod in a diamond patterned abrasive surface which could be up to 2 million grains of grit. A steel sharpener should be at least as long as the blade you are sharpening. The beehive shaped handle allows for a sweeping sharpening action with the left-hand or right hand. A frequent question is "what is the difference between a diamond, ceramic or honing steel." The answer is the core material. The diamond steel with a finishing layer of hard chrome actually grinds away material from the knife, allowing it to reset the edge. The ceramic sharpener has a very brittle surface that gently sharpens the blade. The ceramic sharpener is sensitive to shocks and can be damaged if dropped.
