Zwilling J.A. Henckel Twin Pro 7" Santoku Knife W/ Hollow Edges

A good knife is a lifetime investment. The Zwilling J.A. Henckel knife line has put the quality, function, handling, and precision ahead of all other knife competitors. The Twin Pro Series are one of the most unique designs by Zwilling J.A. Henckel. What makes this knife style unique is the forged bolster area where the blade connects to the handle. This area has a thicker top end that is angles downward allow you to put your hand almost completely on top of the blade and use it for chopping and other fine cutting needs. The handles are made with the classic 3 riveted design, and have the full handle for standard holding as well. These knives are made from Henckel SigmaForge design. This SigmaForge design is precision forged from one solid piece of steel. The steel in a Henckel Twin Pro knife is made from a special formula o

    Zwilling Twin Pro!
The new Pro series from Zwilling has gone through a lot of testing from professional chefs to engineers. The Zwilling Pro knife allows you to grasp the knife more along the blade and give you more versatile control over your chopping slicing and cutting of your vegetables and meats.

    Knife Differences:
The Zwilling 7" Santoku Knife is great for making those precise cuts ultra thin. The 7" comes in just above the 5" Santoku giving you a little more retail space to make those precise clean cuts in larger objects as well.  The Hollow edges allow for paper thin slices that make this knife the most useful knife out of the whole Pro Collection. All Santoku knives have an Asian Edge of 10 degrees. This blade is meant for chopping vegetables, and making thin slices of whatever products you want. The 7" blade is made from the same high carbon quality steel in Germany to the highest standards.

I have owned Henckels International kitchen knives for the past 15 or so years. They are well made, hold an edge, and just do what I need in the kitchen. My wife lost my Henckels paring knife, and before she could replace it with a cheapie I bought this. The knife arrived sharp, but I noted a very slight burr. A few strokes with my ceramic hone on each side and back again and the edge was perfect! By the way - to prevent getting a burr you slide slightly into the edge (toward the edge) as you sharpen or hone. If you slide out away from the edge you increase the chance of raising a burr which spoils the edge.

This knife is wicked sharp - be careful. I slightly nicked one finger using it without even feeling it cut.

It's far better to own a few really good knives like this than a drawer full of junk knives from the grocery store or TV ad.

With a modern hard stainless steel blade like this, sharpening requires a diamond sharpener. A ceramic rod hone will polish and remove a slight burr and straighten out minor nicks, but won't do much for sharpening. (Posted on 4/26/16)
