Ingredients:
2 Russet Potatoes 2 Cups Red Enchilada Sauce 2 Cups Shredded Chicken 1 Cup Shredded Cheese

Step 1 Preheat oven to 350F. In an oven-safe casserole dish, pour in some enchilada sauce, just enough to coat the bottom.
Step 2 Attach Sheet Cutter to KitchenAid Mixer and load potato per manufacturer's instructions. Slice potato into a long sheet using the Thin Blade. Cut potato sheets into squares 5" rectangles.
Step 3 Take a sheet of cut potato and lay some chicken in the middle. Roll the potato around the chicken and place into prepared casserole dish. Repeat for remaining ingredients. Top enchiladas with shredded cheese.
Step 4 Bake in oven for 20-30 minutes until cheese is melted and potatoes are fork-tender.
