Gluten Free Enchiladas Recipe


Need a gluten free flour tortilla or corn tortilla alternative? The KitchenAid Sheet Cutter is an amazing tool that can help with this task. Let the Vegetable Sheet Cutter make thin slices of potato that you can roll up and use as an awesome tortilla replacement. You can still have that amazing casserole dish full of cheesy, melty, enchiladas without gluten! The KitchenAid Sheet Cutter is also great for making vegetable sheets for lasagna noodles, cucumber wraps, and more.

Cook Time: 25 minutes


2 Russet Potatoes
2 Cups Red Enchilada Sauce
2 Cups Shredded Chicken
1 Cup Shredded Cheese


Recommended Equipment:

KitchenAid Sheet Cutter AttachmentKitchenAid Mixers


Step 1
Preheat oven to 350F. In an oven-safe casserole dish, pour in some enchilada sauce, just enough to coat the bottom.

Step 2
Attach Sheet Cutter to KitchenAid Mixer and load potato per manufacturer's instructions. Slice potato into a long sheet using the Thin Blade. Cut potato sheets into squares 5" rectangles.

Step 3
Take a sheet of cut potato and lay some chicken in the middle. Roll the potato around the chicken and place into prepared casserole dish. Repeat for remaining ingredients. Top enchiladas with shredded cheese. 

Step 4
Bake in oven for 20-30 minutes until cheese is melted and potatoes are fork tender.
