BLT Zucchini Noodle Salad

Gluten free noodles off the shelf can be decent tasting, but also can lack in nutrition. With a spiralizer, you can have noodles made completely out of vegetables! Talk about healthy. Try out this raw zucchini BLT salad we made with the OXO spiralizer, no cooking required. Spiralizers are great for making gluten-free pasta dishes, just blanch the spiralized noodles for a couple of minutes and toss with your favorite sauce. 

 4 Serving
Cook Time: 5 minutes


1-2 Zucchini
1/2 Cup Cherry Tomatoes, halved
1 Cup Cooked Bacon, crumbled
2 Tbsp Parsley, chopped
3 Tbsp Olive Oil
Salt and Cracked Black Pepper

Step 1
Spiralize zucchini according to OXO's instructions. Add to a large mixing bowl. 

Step 2
Add tomatoes, bacon, parsley, and olive oil into a bowl of zucchini noodles. Gently toss to combine and season to taste with salt and pepper. Refrigerate for 2 hours for maximum flavor.
