Gluten Free Zucchini Fritters
- 3 Medium Zucchini
- 1 Onion, Fine Diced
- 3 Garlic Cloves, Minced
- 1 Egg, Beaten
- 1/2 C Oat Flour
- Sea Salt & Cracked Pepper
- Olive Oil for Frying
Take 1 cup of whole oats and run through a grain mill on a fine setting to create oat flour.
Cut ends off zucchini and shred with a box grater. Take shredded zucchini and give it a good squeeze in your hands to get out any excess moisture.
In a bowl, mix zucchini with the diced onion, garlic, egg, salt and pepper. Sprinkle over oat flour a little at a time and mix in until everything starts to hold together.
Heat a large pan on the stove and add olive oil. As soon as the oil is hot, add a palm sized scoop of fritter batter to the pan and flatten with a spatula turner. Fry on each side for a few minutes, until each side is golden brown.
