Step 1 To prepare the ice cubes, pour pomegranate juice into ice cube molds. Add in some fresh rosemary leaves to the ice cubes if desired. Place in freezer to harden ahead of time (typically takes 2-3 hours to freeze).
Step 2 In your on a small plate, add simple suyrp to coat the bottom of the plate. On another small plate, place the crushed candy hearts. Dip the rim of your glass in the simple syurp then dip the rim into the crushed candy hearts.
Step 3 Fill the cocktail shaker full of ice. Pour in gin, grapefruit juice, and simple syrup. Shake for 10 seconds and pour into rimmed martini glass. Top with sparkling water and pomegranate juice ice cube. Enjoy with Mozart's Piano Concerto No. 23 In A Major.
