Step 1 Place water into Vitamix blending container. Add shredded coconut on top.
Step 2 Start blending on the lowest speed and gradually increase to the highest speed. Blend for 3 minutes. Serve or chill and serve later. You can also strain the coconut milk though a fine mesh strainer or nut milk bag for a smoother texture.
Vegan Frozen Pineapple Whip
Makes: 4 Servings
Prep Time: 1 minute Cook Time: 4 minutes
Ingredients:
1 lb Frozen Pineapple chunks ½ Cup Coconut Milk ½ Cup Pineapple Juice 1 T Fresh Lime Juice 1 T Agave Nectar
Step 1a To make your own pineapple cup, use the Norpro Pineapple Corer & Slicer. Slice & core pineapple according to manufacturer's directions. Cube and freeze the pineapple for at least 3 hours. You can also use frozen pineapple from the store.
Step 1 Place coconut milk, pineapple juice, lime juice, and agave nectar into Vitamix blending container. Place frozen pineapple chunks on top.
Step 2 Set Vitamix to 'Frozen Desserts' preset and start blending. Use the tamper to continually push down the pineapple whip to the blade. If you do not have the 'Frozen Desserts' preset, start the blender out on the lowest speed and gradually increase to the highest speed, using the tamper to continually push down the pineapple whip to the blade and blend for 60 seconds.
Step 3 Serve immediately in bowls or pineapple cup and/or place pineapple whip into a container and freeze to enjoy later for a firmer consistency.
Vegan Carrot Cake Smoothie
Makes: 4 Servings
Prep Time: 1 minute Cook Time: 3 minutes
Ingredients:
1/8 Cup Coconut Milk 1/4 Cup Almond Milk Yogurt 1/2 Frozen Banana 1 Large Carrot, chopped into pieces 2 Dates, pitted A Pinch of Cinnamon 1 Tbsp Almond Butter ½ Tsp Vanilla 1 Tsp Chia Seeds
Step 1 If using a standard 64oz blending container, place the ingredients in the order listed into the container. If using a Vitamix S50, place ingredients in reverse order into blending cup.
Step 2 Set Vitamix to 'Smoothie' preset and blend. If the 'Smoothie' preset is not available, start the blender out on the lowest speed and gradually increase to the highest speed blending for 60 seconds.
