The D3 collection has an aluminum core with a layer of stainless steel encasing it creating 3 layers. Aluminum is an excellent conductor of heat but does not heat evenly or retain heat very well. That's where the stainless steel helps - it does retain heat and promotes even heating across the cooking surface. The D3 series gives you a good amount of control over the cooking process - these pans have a moderately-fast heat reaction time. That means the pan will react quickly to the level of heat you apply - the D3 heats quickly when you crank up the heat and will cool down quickly when the heat is turned down or taken off the burner. This makes it great for intermediate cooks developing their cooking skills where heat-sensitive recipes are being made.Â
