The KitchenAid Sheet Cutter attachment not only make beautiful long sheets of fruits and vegetables but now can make wide noodles as well. Take a nutrient dense low carb daikon radish and turn it into noodles for this Asian inspired pho soup thanks to the noodle blade attachment for the sheet cutter.
Step 1 Add pho broth to a large pot over medium heat and bring to a simmer.
Step 2 Attach Sheet Cutter attachment to your KitchenAid Mixer and load a peeled daikon radish using the manufacturer's instructions. Slice daikon radish into long noodles using the Noodle Blade. Cut noodles down to 10"-12" long.
Step 3 As thinly as possible slice mushrooms, jalapeno pepper, and red onion.
Step 4 Add the daikon noodles to the simmering broth and let cook for 2 minutes.
Step 5 Ladle out broth and noodles into a large bowl. Top with mushrooms, jalapeno, red onion, and sliced roast beef. The heat from the broth will cook the thinly sliced food. Garnish with chopped cilantro and a soft boiled egg if you wish.
