KitchenAid Sheet Cutter Noodle Blade Attachment Recipe - Daikon Noodle Pho
The KitchenAid Sheet Cutter attachment not only make beautiful long sheets of fruits and vegetables but now can make wide noodles as well. Take a nutrient dense low carb daikon radish and turn it into noodles for this Asian inspired pho soup thanks to the noodle blade attachment for the sheet cutter.
Daikon Vegetable Noodle Pho
Makes: 2-4 Servings
Prep Time: 15 minutes
Cook Time: 15 minutes
4 Cups Pho Broth
1 large Daikon Radish
3 Large Button Mushrooms, washed
1/4 Red Onion
1 Jalapeno pepper
1 Tbsp Cilantro, chopped
1/4lb Thin Sliced Roast Beef
Soft Boiled Egg (optional)
Add pho broth to a large pot over medium heat and bring to a simmer.
Attach Sheet Cutter attachment to your KitchenAid Mixer and load a peeled daikon radish using the manufacturer's instructions. Slice daikon radish into long noodles using the Noodle Blade. Cut noodles down to 10"-12" long.
As thinly as possible slice mushrooms, jalapeno pepper, and red onion.
Add the daikon noodles to the simmering broth and let cook for 2 minutes.
Ladle out broth and noodles into a large bowl. Top with mushrooms, jalapeno, red onion, and sliced roast beef. The heat from the broth will cook the thinly sliced food. Garnish with chopped cilantro and a soft boiled egg if you wish.
