Demeyere RESTO Stovetop Smoker Use - Preheat pan at high temperature. Drip a few drops of water with spoon or fork into smoker pan after a few minutes to test readiness. When dripped water forms steaming balls that jump around when hitting indoor meat smoker interior, it is ready for use. Decrease temperature intensity about 50%. Scatter two tablespoons wood shavings or chips into pan, or use small pre-made wood smoker can as directed by that manufacturer. Place smoking chamber into pan over shavings. Smoking chamber prevents dripping and allowing smoke to escape sideways rather than penetrate foods. Put steaming grid into stovetop smoker, which elevates foods as needed for proper cooking and provides perfect base for cooking. Decrease temperature intensity again, to the lowest settings. Place lid on indoor meat smoker. Foods cook slowly, a food thermometer to gauge doneness is recommended.
