Unlike a santoku knife which is more of a multi-purpose Japanese-style knife used for vegetables, fish & meat, the WÜSTHOF Classic IKON 7" Nakiri Knife is traditionally used for slicing, dicing & chopping vegetables. With a straight edge blade & more squared squared off tips than most other knives, it allows you cut all the way thru to the cutting board without having use several sawing motions. The Nakiri Knife also features a hollow edge blade that has small vertical indentations on the blade which create air pockets between the blade & food to reduce friction & drag when slicing which make it easier for vegetables like potatoes, eggplant & zucchini to slide off of the knife after each slice.
