KitchenAid's Almond, Coconut, and Chocolate Muffin Recipe

ALMOND, COCONUT & CHOCOLATE MUFFIN RECIPES

INGREDIENTS

  • 4 tablespoons unsalted butter
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon kosher salt
  • 1/2 cup granulated sugar
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons milk (I used 2%)
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon coconut extract
  • 1/2 cup semisweet chocolate chips, plus extra for garnish (optional)
  • 1/2 cup whole roasted almonds, roughly chopped, plus extra for garnish (optional)
  • 1/2 cup coconut flakes, plus extra for garnish (optional)

DIRECTIONS

Place the butter in a small bowl and cover with a paper towel. Microwave for 1 1/2 minutes on 50% power. Set aside.

Preheat the oven to convection bake (manual) at 425° F. Line a muffin pan with liners.

Place the flour, baking powder, and salt in the bowl of your KitchenAid Commercial Stand Mixer. Mix together on low speed until combined.

In a separate bowl, stir together the sugar, Greek yogurt, milk, egg, vanilla and coconut extracts, and melted butter. Pour the liquid ingredients into the dry. Stir together on medium-low speed until just barely combined (batter will be very thick).

Fold in the chocolate chips, almonds, and coconut, and divide the batter evenly between 6 wells of the prepared muffin pan. Garnish with additional chocolate chips, almonds, and coconut (if desired).

Place in the preheated Microwave, and set to bake for 5 minutes.

After 5 minutes, set the Microwave to convection bake (manual) at 350° F for 9 to 14 minutes or until a toothpick inserted in the thickest part of a muffin comes out clean or with a few moist crumbs.

    This is my 3rf kitchenaid mixer. Not because of mixer failures, but every mixer was an upgrade. When I thought my baking goods were sufficient, requests increased and I knew I had to upgrade again. Through much research, I landed on this model. Thank God for kitchenaid and the adaptive sizes of their mixer options! I ABSOLUTELY LOVE this model. I can now triple batch my recipes which has cut my time to more than half. Productivity is up and my new mixer is exceeding my expectations (although I've never doubted this brand)! It is a larger mixer than my old one but even more quiet in comparison especially when I'm whipping up a double batch of buttercream icing!! I highly recommend this model for avid home bakers and even in commercial businesses!!

    I received a week ago this mixer is big enough to handle very large batches with ease. This is replacing a over 30 year old smaller KitchenAid that is being passed onto my daughter. most of the attachments I have will fit this one The only one that will not work on this one is the ice cream maker which uses the beater hub too mix and the hub is larger on this one the bowl will fit and KitchenAid could design an adapter that would work as an add on. I will have too buy a new ice cream maker made by another brand.

    I received this for Christmas and was swept away with excitement and genuine happiness. I have the newest of the Flour Power 6 mixers in addition to this. My luck in the past has been met with horror as my KitchenAid Mixers break down and constantly need to be sent to the mixer repair center, which is very costly for me. The new addition to the appliance family in my kitchen has out performed to my highest expectation. The only problem I have is that the lift bowl rim has several rough raised burrs that need sanding down and touch up paint applied. For the price of the unit which was over $1,000, it should be in pristine condition, not only with operation but cosmetic appearance as well.

    It is a great machine, but don't be fooled it is not for commercial use. What it is good for, is if you like to make extra big mixes. I would not recommend this to a person that does very little baking and does small mixes. The six cup machine will be much better for you.

    Ok Folks...you cannot go wrong with this one, hands down it has longevity, great service, and just always works. I received mine Christmas of 1978 with the dough hook, the whip, and flat beater. For 38 years that beauty has decorated my kitchen counter and still looks like the day my then fiance bought it for me. Hubby and I had our 35th Anniversary this year. And my Mixer is running great. I don't abuse her, but I do use her.

    I bought this a month ago and I love it! I also currently have another kitchen aid artisan mixer and I use my commercial mixer for large cake size batters and even can double the recipe which saves me time. When I make swiss meringue buttercream, it requires constant mixing and this one can handle it without worrying that the machine will overheat or breakdown.

    It's built last. I mean, 'pass down to your grandchildren' built to last. (I speak from experience because my grandmother left it to me.) It stays right in place while it's in use...so you don't have to worry about it walking off the counter. It's powerful and makes the best dough, even the tough ingredients like sprouted wheat flour. I absolutely love it and I show it to every guest that visits my home. I recommend the Commercial Series to every home chef I know, and several have bought it and thanked me with the pasta, bread, cakes, sauces, meatballs, and doughs they've made. Recommending this model has been great for my diet! Haha. I've been eying the grain mill attachment since I got the mixer because I want to make my own flour, and I'd finally decided to buy it...then two days later my mixer was stolen. It's the only thing they took, so I must have told the wrong person about it and they just came to get it. I came here to check the current model number and to see how much money I'm going to have to save to buy a replacement. No longer having it is a major bummer and saving the money is going to take forever (single dad). It's worth it, though. I'm super looking forward to having one again!! The closest thing I have to a complaint is that it isn't available in KitchenAid's 'Espresso' (or some other dark brown) color. I think that would look even cooler than the red. (The red is pretty awesome and you know it's a KitchenAid from a mile away.) If you're here looking at it, then I assume you're considering purchasing one...and I totally recommend you do it. I can't imagine you being unhappy with it.

    I bought this stand mixer about 5 months ago. The Kitchenaid mixer that it replaced is still in service, but my needs had changed since I purchased that one 15 years ago. I moved on from backing cookies and cakes to baking bread. The old flip top one was taking too many trips to the repair shop, so I bought the biggest one I could get my hands on. When they tell you that the machine is rated to deal with 18 cups of flour, they aren't kidding around. I can now make multiple recipes of bread and the its amazing to finally have a mixer that doesn't care if you use 5 cups of flour or almost 20.. it works the dough just the same. I have one gripe... The finger guard looks great and is a nice feature to keep little hands away from dangerous situations.. It makes using the accessory port on the top (for the pasta roller, juicer etc..) impossible. I wish this was considered during the design.

    I have only used it a couple of times, so far. I have it for a week now. One dough and used the grinding attachment. I have a ~40 year old 4qt and this is replacing the 9-year old 6qt I killed making dough. This one, on speed 2 recommended for the dough hook, labored through the dough that killed the 6qt. The motor seems to sense the toughness of the dough. It slows, even stops, but then pucks back up and continues working. It doesn't seem to labor, just gets stronger. It completed the kneading that the 6qt couldn't. I suspect this mixer will last for many years at hard labor! Using the grinding attachment from the old mixer it double ground some port with no problems. Not much physically bigger than the 6qt and about the same weight. Even when laboring over the dough, the motor barely got warm. So far, I am very satisfied.
