    • 16 ounces gluten-free or wheat elbow macaroni
    • 2 tablespoons extra-virgin olive oil, plus a splash for boiling water
    • 1 cup diced yellow onion
    • 2 cloves garlic, minced
    • 3/4 cup vegetable broth
    • 2 tablespoons fresh lemon juice
    • 1 cup raw unsalted cashews
    • 1 cup steamed carrots
    • 1/2 cup nutritional yeast
    • 1 1/2 teaspoons sea salt, plus more to taste
    • 1 teaspoon dijon mustard
    • 1/8 teaspoon freshly ground black pepper, plus more to taste
    • Pinch of smoked paprika, plus more to taste
    • 2 cups steamed broccoli, chopped into small pieces


    1) Bring a large pot of water to a boil with a splash of olive oil and pinch of salt. Cook the pasta according to the instructions on the package until al dente and drain thoroughly.

    2) Transfer the pasta back to the pot, and stir in 1 tablespoon of olive oil. Set aside.

    3) Heat 1 tablespoon olive oil in a small skillet over medium heat and sauté the onions and garlic for about 5 minutes, until soft and translucent. Allow to cool slightly.

    4) Place the broth, onion mixture, lemon juice, cashews, carrots, nutritional yeast, salt, mustard, pepper, and smoked paprika into a blender. Secure lid and blend on speed 8 for 40-60 seconds until smooth and creamy. Add more salt, pepper, and paprika to taste.

    5) Pour the sauce onto the pasta, add the steamed broccoli, and gently stir to combine. On low heat, warm gently. Transfer to a shallow baking dish and serve family style, or portion out into bowls. Season to taste.

    This is my one KitchenAid item that I'm not so sure about. I have tried to use this a few times, and really have not been very successful. Theses failures could definitely be all of my fault, as the pasta dough recipe could be off...alas I have had problem with this jamming and even overheating my mixer (I almost had a meltdown myself). Its been hard for me to find the right consistency to get the dough to come out like it's supposed to. Also, it's fairly labor intensive to clean, I have to soak the part in soapy water to get the dough out of the presses (which can't be good for the parts). All in all, when it worked it was great but I'm slightly afraid to use it because of the overheating. I will definitely try it again, if I can find a better dough recipe.

    I have wanted this attachment for such a long time, I was beyond excited when I finally received it in the mail. The recipe was easy, the attachment was very easy to figure out, and the whole process was fun and exciting. It does make very tasty pasta. I will continue to use this over and over again. My only complaint so far is trying to clean the dough out of those pasta discs. Those little wholes are not easy to clean out. Even with that problem, I still love this attachment and would buy it any day. Highly recommended for the pasta loving families like mine!

    Not the best attachment Review by

    I purchased this attachment for my wife as a Christmas present. The first three or four times we used it the pasta did not come out as it should have. Just yesterday, while making another batch of pasta, I noticed a black sludge coming from the pasta press. The auger seemed to be cracking and I immediately shut down the mixer. There was an oil around the gear of the Pasta Press and inside the press. Today, I went onto the KitchenAid Chat and I was told this BLACK oil/sludge was a food grade - non-toxic substance and everything was ok...if I wanted I could contact the company by phone regarding the warranty information. This Press is only three months old and I shouldn't have the issue of black sludge coming from the inside of this so soon. I feel like I wasted $150 on this piece of equipment. Also, I work in the medical field...anything that is black and has an oily feel to it is everything but NON-TOXIC. I gave this a 2-star rating because the first couple of times we used it, we as a family enjoyed making pasta together. The major reason we purchased this piece of equipment is because our son is Autistic and we wanted to make better quality, homemade food...we didn't expect the food would have black sludge in it or the equipment sounding like it was cracking three months since the purchase date and only used five times.

    I had never made or had home made pasta before but now we will have it often. The first time I made spaghetti and the dough was to wet they all stuck together before I could get them in the pot. But the second time I added a 1/4 cup flour and left out 1 egg and it turned out perfect. Just be sure to make dough into golfball size pieces and feed them into the press. Dough needs to be at room temp also or it takes forever to get thru the press. Leftovers were even good eating. give it a try you wont be sorry

    My husband and I received this as a wedding present, as we had been to many restaurants where fresh pasta was used and we want to be able to recreate some of our favorite dishes.     The pasta ring broke the first time I used it, with a typical extruder pasta dough recipe. The plastic parts for this extruder are not sturdy enough for use with an extruder where heat and pressure work the pasta dough through the dies to form the pasta noodles. The components need to be made of metal such as stainless steel or aluminum. There is no customer support in Singapore to help bring in the replacement pasta ring (they don't know what I'm talking about even when I gave them the part no) and Kitchenaid in US can't help because I'm not in the US.

    I've been working hard to cook the most fresh, whole food I can, using foods with a minimum of preservatives. I have recently begun making my own pasta sauce, so when this wonderful attachment for my mixer arrived I was thrilled! I had never made my own pasta so I went in search of a whole wheat recipe in an effort to be more healthy. The texture of the dough was such that the finished pasta was too dense to be enjoyable. Next, I tried the recipe in the pasta press handbook and it was divine! Great fresh pasta made quick and easy with fresh, whole ingredients. Following the instructions in the handbook are important for easy clean-up. This attachment is easy to use and to clean. No more store bought pasta for me!

    I bought this 1 year ago. Recently I used a new recipe for pasta that was a little stickier and the auger broke. I called for a replacement and although they continue to sell this attachment for more than $150 they do not have a replacement. Not acceptable! I will not be purchasing any additional kitchen aid items. Their quality and customer service has obviously declined.

    I didn't get to use it for awhile after I got it due to circumstances beyond my control. However, once I got to play with it I fell in love. And the attachments are very easy to attach and use - I have the pasta press and the meat grinder. The mixer itself is fairly quiet, for a heavy duty mixer. I believe as I have more time to play, I will thoroughly enjoy it. And I love the handle on the bowl. My old Kitchenaid bowl did not have that feature.

    I truly love my KitchenAid product line. This accessory is no exception. I just find it would be so much easier if you could put ALL the pieces into the dishwasher for cleaning. There is a note that indicates some pieces need to be hand-cleaned. I like simplicity and would like to throw everything into the dishwasher after preparation. Also, I would like MORE pasta shapes. Great initial variety, but I'll bet you have some inventive ideas out there!

    One good noodle per cut... Review by

    Quite simply, if you are making a tube-shaped pasta, you are likely getting one good noodle per cut (good meaning open on both ends). The wire drags across the plate, essentially sealing one end of the tube. The noodle that is open on both ends is the one closest to the wire. I tried adding flour to the included recipe, flouring the ball before tossing it in the hopper, slow cut, fast cut, flouring the wire between cuts. I can not be the only person having this issue, yet I can not find a trouble shoot. Is there a trouble shoot for this issue?

    I bought the attachment about two months ago and have used it several times. There is always a learning curve with pasta attachments (I also have the flat pasta attachment) but once you determine the correct amount of water to add to your dough it makes fantastic, great tasting spiral pasta.     The key is what you put into the extruder. Making the dough is the tricky part. Let me tell you, we made a half batch of egg noodle pasta dough using the recipe in the user manual. My wife and I worked together; I supplying the final muscle for the hand knead. Do not rush. The dough is do-able because you look at it as it develops. The last, hand knead phase is where it all comes together. We had what looks like satisfactorily constructed pasta dough. We wrapped it in the wax paper and it appearing as a large salt water taffy. Let it rest. Let moisture find its way into every bit of flour that missed your inspection. Let the gluten develop. 10 to 15 minutes. Go have a sip of wine. Think about the wine you're tasting and how well it will accompany the pasta dish with will come from your pasta effort. Extrusion is a piece of cake. My wife wanted Mac and Cheese and is partial to a smoked gouda version. Our first pasta we produces using this extruder was large macaroni. It just plain worked. A half recipe produces about 9ish ounces of macaroni. Thick going into the boiling, salted water. Marvelously al dente as a finished product. Is sum, the extruder works. It expressed beautifully smooth and toothsome product. Enjoy!
