The Shun 8-inch Classic Series Chef's Knife has a medium weight and size, making it a suitable all-purpose blade for chopping, slicing, mincing, and dicing fruits and vegetables. Great weighted knife with layered steel. I own a full set of these shun knives and down own this model personally I have the Ken onion 8" instead. I got this as a gift for someone. She was getting sick of her german made knives due to their heavy weight. This is very light and thin blade makes cutting easily.
Keeps an edge very well but is a bit harder to sharpen with the vg-10. It does have a very nice heat treat and keeps an edge better than my many vg-10 pocket knives. (Posted on 4/23/16)
